Our 10 easy vegetarian and vegan recipes for the summer!

To celebrate the arrival of summer, we would like to share with you our 10 favourite healthy, vegetarian and vegan recipes of the season. Salty as sweet, refreshing and gourmet, but above all super simple to make, they will accompany you during the sunny days and the hot weather, and at any time of the day. And there is no reason to deprive yourself since they are all balanced, vegetarian or vegan, and of course good for your health!

 For all your vegetables and dairy products, we recommend that you choose organic food and buy it from small shops near you. It will also allow you to have a positive impact on the local economy. 


Vegan watermelon and organic mint smoothies



Ingredients (for 4 glasses) :

  • 1/2 watermelon 
  • Fresh mint 
  • 1 lime
  • Crushed ice


  1. First, peel the watermelon, remove the seeds, then cut it into small cubes to simplify mixing.
  2. Wash the mint and chop it finely. Don't forget to keep a few leaves to decorate your smoothie!
  3. Using a blender, mix the watermelon cubes and chopped mint, and gradually add the ice cream, the equivalent of a classic glass. Once you have obtained a smooth and homogeneous mixture, you can add the lime juice to suit your taste.
  4. Place the mixture in large glasses and add the mint leaves you had set aside on top. Enjoy your fresh smoothie right away! 


Organic lemonade



Ingredients (for 4 glasses) :


  • 5 yellow lemons 
  • 1 liter of sparkling water 
  • 100 grams of sugar 
  • Fresh mint
  • Ice cubes 


  1. First, squeeze 4 lemons to get the juice, and cut four slices of the fifth lemon. With the rest of the lemon, grate some zest to add to the juice.
  2. In a bowl, mix the lemon juice, sparkling water, and mint sprigs and let stand overnight, remembering to cover the container. 
  3. In a saucepan, bring water and sugar to a boil.
  4. After filtering the lemon juice from the day before, mix it with the syrup obtained, then leave it to rest for 1 to 2 hours in the refrigerator. 
  5. Use a few mint leaves and the cut lemon slices as decoration, then enjoy!


Vegan banana pancakes



Ingredients (for about 10 pancakes) :


  • 175 grams of flour 
  • 3 bananas 
  • 250 ml of vegetable milk (almond, soy, rice, etc.)
  • 1 sachet of baking powder 
  • 20 grams of sugar 
  • 30 ml of vegetable oil 
  • Salt 


  1. First, peel the bananas, cut them into pieces, then mix them with a blender.
  2. Add the flour, yeast, sugar and a pinch of salt and mix. 
  3. Gradually pour in the milk and oil and continue to whisk the mixture until it is smooth and homogeneous. 
  4. Heat a greased frying pan, then pour the equivalent of two tablespoons of the mixture, to be adapted according to the desired thickness for pancakes. Quickly spread the mixture in circles and cook for a few minutes. When air bubbles begin to form on the top of the pancake, turn it over and cook the other side for just 1 minute. 
  5. Serve pancakes right away, which you can enjoy with fruit (strawberries, blackberries, raspberries, bananas, etc.) or maple syrup for example. 


Organic guacamole



Ingredients (for 4 people) : 


  • 2 avocados  
  • 1 tomato 
  • 1/2 onion 
  • 1 lime 
  • Coriander 
  • 1 jalapeno pepper 
  • Salt and pepper


  1. Start by peeling the avocados, which you can briefly cut into pieces, making it easier to crush them with a fork. Add the lime juice to the mixture.
  2. Cut the tomato, chili pepper, and half the onion into small cubes and add them to the avocado. 
  3. After mixing roughly, add the chopped cilantro, salt, and pepper. 
  4. Serve your guacamole immediately. For example, you can place it on toast and add a soft-boiled egg on top to enjoy it as a starter, or adopt the classic nachos for an aperitif!


Vegan porridge with organic kiwi



Ingredients (for 4 porridges) : 


  • 5 kiwis 
  • 1 lemon 
  • 200 ml of vegetable milk (almond, soy, rice, etc.) 
  • 200 grams of oatmeal 
  • 60 grams of sugar 
  • 1 vanilla bean 


  1. First, peel the kiwis, then cut them into small pieces. Sprinkle the kiwi cubes with lemon juice, then crush them coarsely with a fork. The idea is to be able to prepare this mixture the day before, and thus be able to let it rest in the refrigerator so that the flavours mix well with each other. 
  2. Bring the milk to a boil, then gradually add the oatmeal, sugar, and part of the vanilla pod cut into small pieces. It is possible to replace vegetable milk with water according to your taste or diet. Continue to stir while heating for a few minutes over low heat, and cover your pan.
  3. After a few minutes, let the oatmeal cool slightly, then add the kiwi mixture. You can decorate your porridge with a few slices of kiwi and a few pieces of the vanilla pod if you have any left. Feel free to add other fruits, there are a thousand ways to enjoy porridge.


Vegan panna cotta with organic strawberries



Ingredients (for 4 people) : 


  • 250 ml of vegetable milk (almond, soy, rice, etc.)
  • 250 ml of coconut cream 
  • 50 grams of brown sugar 
  • 50 grams of sugar 
  • 2 grams of agar-agar (vegetable gelling agent)
  • 300 grams of strawberries 
  • 1/2 lemon 


  1. In a saucepan, pour in the vegetable milk, coconut cream, brown sugar, and agar-agar, then bring to a boil, while stirring. Then, let it heat on a very low heat for about 2 minutes. 
  2. Place this mixture in glasses, and place them in the refrigerator for 5 hours. Be careful, do not fill the glasses up to the top in order to leave room for the strawberry coulis! 
  3. Meanwhile, wash and remove the stems from the strawberries. Set aside 4/5 of them, which you will cut into slices or cubes to decorate your verrines just before serving. Put the strawberries in the blender, and add the lemon juice, sugar, and water as you go. 
  4. Once your panna cotta has rested and firmed, pour the grout over it and decorate with the strawberries you had previously set aside. It's ready you can enjoy!


Vegetarian carbonara pasta



Ingredients (for 4 people) : 


  • 500 grams of spaghetti 
  • 3 zucchini
  • 4 carrots
  • 10 button mushrooms
  • 1 onion 
  • 5 eggs 
  • Basil 
  • 100 grams of Parmesan cheese
  • Olive oil 
  • Salt and pepper


  1. Start by washing all the vegetables, then peel the carrots. Cut the courgettes and carrots into julienne strips, then the mushrooms and onion into thin strips. 
  2. After heating a frying pan greased with olive oil, fry the onion and add the other vegetables. Leave to cook for a few minutes. Don't forget to add salt and pepper!
  3. In a bowl, pour the parmesan cheese and add five egg yolks. Season with salt and pepper, then with a whisk beat the mixture vigorously. If you wish, you can add a little fresh cream or milk to obtain a more liquid carbonara.
  4. Bring salted water to a boil in a saucepan, then cook the spaghetti for the time indicated. 
  5. Mix all your ingredients, then arrange them on plates with a few basil leaves and parmesan shavings. Enjoy!


Thai cucumber salad

Ingredients (for 4 people) :


  • 3 Lebanese cucumbers 
  • 1 clove of garlic
  • 1 red onion 
  • 1 chili pepper 
  • 1 lime
  • 75 grams of coconut cream 
  • 20 grams of sugar 
  • Coriander 
  • Mint 
  • Crushed peanuts 
  • Salt and pepper 


  1. Start by mixing all the ingredients of the sauce together, namely lime juice, coconut cream, and sugar. Add a little water to the mixture, then salt generously and pepper. 
  2. Wash and cut the 3 cucumbers into thin slices. You do not need to remove the skin, it is much better digested for Lebanese cucumbers.
  3. Chop the coriander and mint, which you will then add to the cucumbers, then cut the onion and grate the garlic, and mix. 
  4. In a large bowl, mix the sauce and cucumbers together, then let stand in the refrigerator for at least 1 hour. You can decorate your Thai salad with a few sprigs of mint, and according to your taste some crushed peanuts. It's ready! It's ready!


Organic tomato gazpacho



Ingredients (for 4 people) : 


  • 5 tomatoes 
  • 1 cucumber 
  • 1 red pepper 
  • 1 green pepper 
  • 1 onion 
  • 1 clove of garlic 
  • 1 chili pepper 
  • 24 grams of olive oil 
  • 1 lemon yellow
  • Basil 
  • Salt and pepper 


  1. Start by washing all the vegetables. Then, mingle the tomatoes, peel the cucumber and seed it, as well as the two peppers. Cut it all into small cubes to make blending easier. Add the chopped onion and garlic to the mixture and mix.
  2. Add the olive oil and lemon juice. If the mixture is not sufficiently liquid, you can pour a little water into it. 
  3. Chop the basil and add it to the mixture, don't forget to mix it several times! Season with salt and pepper then set aside in a cool place for at least 1 hour.
  4. Pour the gazpacho into small glasses, and decorate with a few basil leaves, then enjoy. 


Organic apricots popsicles



Ingredients (for 6 people) : 


  • 500 grams of apricots 
  • 50 grams of sugar 
  • 50 ml of water 
  • Thyme 
  • 30 grams of sugar 


  1. Start by washing and pitting the apricots: to do this, cut them in half and remove the stone. 
  2. In a large saucepan, heat the pitted apricots with 50 grams of sugar and water. Simmer over low heat, and until the apricots have completely melted. Keep the mixture in the fridge. 
  3. Repeat the operation with the thyme leaves: heat the sugar and water in a saucepan, then add the thyme, and let it steep for a few minutes. 
  4. Once both mixtures have cooled, sprinkle the apricot compote with thyme syrup, then pour it into popsicle molds before placing them in the freezer for at least 5 hours.
